Most likely a hotel is 3 phase power, most likely a Y type feed. This
gives you 3 different 120V feeds, to ground and 208V between any 2 phases.
Yes if you loose 1 phase the other 2 will still be there.

1 phase down, you will experience the following:
A: all 120V connected to the missing phase will be out of power.
B: all 208V devices connected to the missing phase will be down.
C: all 3 phase equipment will be down or "not working right" (for 3
phase motors this includes serious overheating)
D: 120V connected to either of the 2 remaining phases should function
normally.
E: 208 equipment connected to the 2 remaining phases should function
normally.
